INGREDIENTS

for 5 U.S. gallons (19 liters)

 

3.3lb can Muntons Light Malt Extract

3.3lb can Muntons Amber Malt Extract

3.3lb can Muntons Dark Malt Extract

1/2 lb (.23kg) Crystal Malt 60L

1/4 lb (.11kg) CaraVienne Malt

1/4 lb (.11kg) Chocolate Malt

1/2 lb Molasses

3-1/4 oz Saaz Hops (4.0%AA) for 90 minutes

1/2 oz Saaz Hops (4.0%AA) for 30 minutes

White Labs WLP830 German Lager Yeast

1-1/4 cups Muntons DME for priming

 

Original Specific Gravity:  1.080-1.085

Final Specific Gravity:  1.016-1020

IBUs:  29

ABV:  8.8%

 

Steep grains at 150 degrees in one gallon of water for 20 minutes.  Remove grains and sparge with one gallon of 170 degree water.  Stir in extract and molasses and then bring to a boil.  Add 3.25 ounces of Saaz hops and after 60 minutes add additional .5 ounce of Saaz hops.  Boil for an additional 30 minutes.  Transfer wort to primary fermenter and add 3 gallons of cold water (top up to 5 gallons total volume if necessary).  Pitch yeast from starter when wort temperature is 70 degrees or below and aerate well.  Ferment at 47 to 52 degrees for two weeks.  Transfer to secondary fermenter for an additional four weeks at 57 to 62 degrees.  Lager at 40 degrees for two months.  When lagering is complete, bottle with 1-1/4 cups DME.
