We have discontinued purchasing bulk acid blend from our wholesaler because they were making acid blend with 50% Citric Acid and only 10% Tartaric Acid. Years ago the typical acid blend was 40% Tartaric, 40% Malic and 20% Citric. Because citric acid is cheap and tartaric acid is much more expensive the powers that be have shifted the balance of acids toward citric. We believe that the old way is better! Our acid blend is mixed here at our winery and contains 50% Tartaric Acid, 40% Malic Acid and 10% Citric Acid.
